Under the guidance of Executive Chef Matteo Bartaletti, the menu at Pimms celebrates Anguilla’s land and sea, elevating local ingredients through thoughtful technique and refined simplicity. We began with warm, freshly baked bread, soft and comforting with just the right amount of crust. It’s the kind of opening that invites you to slow down, settle in, and enjoy what’s to come. Poached Anguillian lobster was paired with creamy avocado, crisp chayote, and a delicate lemon aioli. The flavors were clean and balanced, allowing the sweetness of the lobster to remain front and center. For the main course, the coconut-poached grouper showcased the kitchen’s ability to let ingredients speak for themselves.
